Hearts of Beef and Escarole with Warm Anchovy Vinaigrette & the Bloody brew
(think tomatoes, tabasco, celery, horseradish, basil, and beets);
Tallow Poached Salmon in Borscht with Zone 6,
a wild ale with quince and black currants for a juicy, tart, bright and tropical taste;
Spit-roasted Beef and Broccoli with Mapo Tofu &
the lightly carbonated Stock Ale;
Braised Beef Ravioli with Cheddar Sauce and all the hot peppers
in the appropriately named Pepper Ale;
